Zoodles (aka zucchini noodles) are spaghetti’s greener cousin. They resemble pasta in looks, but they bring a different flavor to the mix and they offer more bang for your buck when it comes to nutrient-density.
On the 4th, we celebrated Independence Day with great friends over a corn hole tournament and scrumptious food. One of my besties made an awesome, super simple zoodle dish, which inspired this Summer Zoodle Pasta. No sautéing, grilling or roasting needed. Just break out your trusty spiralizer, some zucchini squash and a few other fresh ingredients. You’ll have yourself a beautiful, nutrient-packed pasta perfect for a light dinner or colorful side. It’s also great for leftovers. Cheers!
SUMMERTIME ZOODLE PASTA
Vegan, dairy free, grain free, gluten free
Recipe by Jentry Lee Hull inspired by a dear friend
Yields 4-6 servings
- 6 zucchini squash (sub with yellow summer squash if desired), spiralized
- 1 cup sugar plum or cherry tomatoes, sliced into quarters
- 1 large bell pepper, diced
- 1 cucumber, diced
- 1 ½ cups (1 15oz. can) chickpeas, drained and rinsed
- Juice from 1 large lemon
- Juice from ½ orange
- 3 Tbsp. red wine vinegar
- ¼ cup tahini or olive oil
- Pink Himalayan salt to taste
- Red pepper flakes to taste
- 8-10 basil leaves, Chiffonade
- Spiralize zucchini and place into a large bowl. The Paderno World Cuisine Spiral Slicer is our spiralizer of choice.
- Add remaining ingredients, toss and adjust seasonings to taste.
- Serve at room temp or chilled.
- Enjoy as a main dish or a delightfully filling side!
